Steamed Rhubarb

Ingredients

Directions

  1. Place rhubarb in a granite double boiler.

  2. Add 1 cup of sugar for every pint of rhubarb.

  3. Cook until the rhubarb is soft without stirring.

  4. If the rhubarb is very sour, steam it without sugar until the juice flows.

  5. Then add the sugar and steam again until dissolved.

  6. Alternatively, pour boiling water over the rhubarb, let it stand for 5 minutes, then drain and steam.

What each ingredient does

Rhubarb
Provides the main body and tart flavor of the dish.
Sugar
Sweetens the tart rhubarb and balances its acidity.

The step that matters

Steam without stirring until soft. Stirring breaks down the rhubarb pieces unevenly and can make the texture mushy. Steaming gently in a covered double boiler lets the pieces soften while holding their shape.
