Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine bread crumbs, minced onion, chopped parsley, butter, chopped suet, pepper, salt, and beaten egg to make the dressing.

Stuff and bake

  1. Stuff the fish with the dressing and sew or tie it securely.

  2. Place the fish in a pan with some hot water.

  3. Bake the fish, basting it very often.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form the bulk of the dressing and soak up moisture for a soft stuffing.
Egg
Binds the dressing so it holds together inside the fish.
Butter
Adds fat for richness and helps keep the dressing moist.
Suet
Melts during baking, adding fat that keeps the stuffing moist.

The step that matters

Basting the fish often. Frequent basting spoons hot liquid and melting fat over the surface, which helps keep the fish moist and prevents it from drying out during baking.

Swap the onion

How well each one fits the dish's main ingredients (bread, parsley, butter, pepper, egg):
