Potato Dumplings for Meats

Ingredients

Directions

Prepare the dough

  1. Pare and boil the whole potatoes, preferably the day before, then grate them.

  2. In a frying pan, melt the butter and add the bread cubes; cook until slightly brown.

  3. Combine the browned bread cubes with the grated potatoes, add a pinch of salt and the egg, and mix well.

  4. Add enough flour to form a mixture that can be easily rolled into small balls.

Cook and serve

  1. Fill a large pot three-quarters full with boiling water and add the tablespoon of salt.

  2. Drop the dumplings into the boiling water and cover the pot.

  3. When the dumplings float to the top, they are done. Remove as needed and serve hot with cold meat and meat gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole potatoes
Provide the starchy base that binds the dumpling into a soft, tender mass.
Egg
Adds binding so the grated potato mixture holds together when rolled and boiled.
Flour
Adds structure, letting the mixture be rolled into balls that keep their shape in water.
Wheat bread
Browned cubes add a toasty flavour and some texture contrast to the soft potato.
Butter
Fat for browning the bread cubes, adding richness and aroma.

The step that matters

Adding flour. Too little flour leaves the balls fragile and they can fall apart in the water, while too much makes the dumplings dense and heavy. Add it gradually until the dough just rolls easily.

Swap the potato

How well each one fits the dish's main ingredients (butter, wheat, bread, egg, flour):

  1. Leekfits better
  2. Shallotfits better
  3. Asparagusfits better
  4. Potatothe original

Fit is the average pairing score against butter, wheat, bread, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
