Directions

Prepare the eggplant

  1. Peel and slice the eggplant into ½‑inch thick slices.

Coat and fry

  1. In a bowl, beat the eggs lightly and add boiling water.

  2. Dip each slice in the egg mixture, then coat with bread crumbs.

  3. Fry the slices in hot lard until golden brown, ensuring they are fully submerged.

  4. Drain on brown paper and serve on a hot plate.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Provides the soft, tender interior that contrasts with the crisp coating.
Eggs
Bind the bread crumbs to the slices so the coating adheres during frying.
Bread crumbs
Form a crisp, golden outer crust when fried.
Lard
Conducts heat for frying and browns the coating.

The step that matters

Fry the slices in hot lard until golden brown, fully submerged. If the lard is not hot enough or the slices are not fully submerged, the coating absorbs excess oil and cooks unevenly, leaving it greasy rather than crisp. Frying in hot, deep fat seals the crumb coating quickly so it browns and stays crisp.
