Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Provide the bulk of the sauce and its tart, fresh-vegetable flavour.
Onions
Add savoury sweetness and aroma as they soften during the boil.
Green peppers
Contribute fresh, slightly bitter vegetable flavour and body to the sauce.
Vinegar
Adds acidity that preserves the vegetables and sharpens the overall flavour.
Whole cloves
Contribute warm, aromatic spice flavour to the sauce.

The step that matters

Salting and draining overnight. Salt draws water out of the vegetables through osmosis. Draining that liquid before boiling keeps the sauce from becoming watery and helps the vegetables stay firm rather than turning soft and diluted.
