Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the candy base and, once cooked to a hard state, sets crisp and glassy.
Vinegar
Adds acidity that helps keep the sugar from crystallising into a grainy texture.
Baking soda
Reacts with the hot syrup to add gas, lightening the candy's texture.

The step that matters

Boil without stirring. Stirring a sugar syrup as it cooks can trigger crystallisation, leading to a grainy rather than smooth, glassy candy. Keeping it undisturbed lets the sugar reach the correct concentration cleanly.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, vinegar):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Pineapplefits about as well
  4. Apricotfits about as well

Fit is the average pairing score against sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
