Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that gives the cream its body and flavour.
Gelatine
Sets the liquid so the cream holds its shape when turned out.
Eggs
Yolks thicken the custard and whites lighten the texture.
Sugar
Sweetens the cream and helps balance the richness of the eggs.

The step that matters

Adding the yolks and stirring until it boils again. Egg yolks thicken the mixture as they heat, but they can curdle or turn grainy if heated unevenly. Stirring constantly keeps the heat even so the custard thickens smoothly.
