What each ingredient does

Pearl barley
Its starch thickens the liquid into a gruel as it simmers and softens.
Sugar
Adds sweetness to balance the mild, starchy flavour of the barley.
Butter
Adds fat for richness and a smoother, rounder mouthfeel.

The step that matters

Boil for 3 hours. A long, steady simmer is what breaks down the barley starch and softens the grains so the liquid thickens. Cutting the time short leaves the gruel thin and grainy.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (barley, sugar, butter, walnut):

  1. Figfits better
  2. Vanillafits better
  3. Coconutfits better
  4. Lemonthe original

Fit is the average pairing score against barley, sugar, butter, walnut. Candidates are from the same food group and used in at least 100 recipes.
