To Prepare or Boil Coffee
Ingredients
Directions
Brew
In a coffee pot or saucepan, mix the ground coffee and water well.
Stir the mixture with a clean wooden spoon over heat until it boils.
Remove from heat and add a drop of cold water.
Settle and serve
Tap the bottom of the pot on the hob to settle the grounds.
Let the coffee stand for a while to clear before serving.
For best results, prepare the coffee overnight for the next day.

What each ingredient does
- Ground coffee
- Supplies the flavour and aroma compounds that dissolve into the water.
- Water
- Acts as the solvent that extracts flavour from the coffee grounds.
The step that matters
Removing the coffee from heat as it boils. Letting the mixture keep boiling extracts more bitter compounds from the grounds and can scorch the coffee, so the heat should be removed as soon as it reaches the boil.
