Why it works: Thyme and marjoram match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,225 recipes. Both carry terpineol, which smells pine, woody. The science ↓
Beef Olives
Ingredients
Directions
Place the beef on a cutting board and slice it into pieces about ½ inch thick and 4 inches long.
Beat the slices with a wet rolling pin to flatten them evenly.
Chop the trimmings finely and place them in a bowl.
Chop the beef suet finely after removing the skin.
Sift the bread crumbs through a wire sieve into a bowl.
Chop the parsley, thyme, and marjoram finely.
Combine the suet, bread crumbs, parsley, thyme, and marjoram with the chopped beef in the bowl.
Grate the lemon rind and nutmeg into the mixture.
Season with salt and pepper, add the egg, and mix well with a wooden spoon.
Shape the mixture into pieces the size and shape of corks.
Roll up each slice of beef around the mixture.
