Irish Stew

Ingredients

Directions

Prepare

  1. Wash the potatoes well in cold water.

  2. Peel the potatoes, remove any eyes or black specks, and slice them.

  3. Peel the onions and slice them.

  4. Wash the mutton in cold water and scrape it clean. Cut the mutton into small pieces.

Layer and stew

  1. In a large saucepan, layer the meat, then potatoes, then onions. Sprinkle pepper and salt over each layer for seasoning. Continue layering until all meat and vegetables are used.

  2. Pour in enough cold water to cover the bottom of the saucepan. Place the saucepan on the fire and bring to a boil.

  3. Once boiling, reduce heat and let it stew gently for 1.5 to 2 hours. Stir occasionally to prevent sticking.

Serve

  1. Serve the stew hot on a dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down while stewing to thicken the broth and add body to the stew.
Scrag end of mutton
Releases flavour and gelatin into the broth as it stews slowly, giving richness.
Onions
Soften and turn sweet during slow stewing, adding depth to the broth.

The step that matters

Stewing gently after boiling. A rolling boil toughens meat fibres and can break up the potatoes, while gentle simmering lets collagen in the mutton slowly break down into tender meat and a richer broth. Stirring occasionally keeps starch from scorching on the base of the pan.

Swap the onion

How well each one fits the dish's main ingredients (potato, mutton, pepper):

  1. Carrotfits better
