Pokk Pie

Ingredients

Directions

  1. In a large saucepan, combine ½ cup lard and ½ cup cold water. Bring to a boil, watching carefully to prevent it from boiling over.

  2. Cut the pork into 1-inch square pieces.

  3. Place 1 pound of flour in a basin. Once the lard and water are boiling, pour them into the flour and mix well with a spoon.

  4. When the mixture is cool enough, knead it with your hands until it forms a stiff paste.

  5. Transfer the paste to a floured board. Cut off a quarter of the paste and shape the rest into a basin, pressing it evenly with your hands.

  6. Flour a knife and level the top of the paste.

  7. Dip the pork pieces in cold water, season with salt and pepper, and place them closely inside the paste basin. Optionally, sprinkle with chopped sage.

  8. Roll out the remaining paste with a floured rolling pin to cover the top of the pie.
