  4. Place the spinach in a large saucepan, sprinkle with salt, and boil without adding water for 10 minutes with the cover off.

  5. Drain the spinach again and press out all the water until dry.

  6. Chop the spinach finely or rub it through a wire sieve if preferred.

Make the creamed spinach

  1. In a stewpan, melt 1 ounce of butter, then add the spinach, pepper, salt, and cream, mixing well.

  2. Heat the mixture on the stove, stirring until hot.

Make the toasted bread

  1. Cut a slice of bread into triangular pieces.

  2. In a frying pan, heat 2 ounces of butter or clarified dripping.

  3. Fry the bread pieces in the hot fat until pale brown.

What each ingredient does

Spinach
Forms the bulk of the dish and, once pressed dry, gives a concentrated green flavour.
Butter
Adds richness and fat, carrying flavour and helping the spinach feel smooth.
Cream
Adds moisture and richness, helping the chopped spinach become a smooth, spoonable mixture.
Bread
Toasted in hot fat, it browns and crisps, adding contrast to the soft spinach.

The step that matters

Press the spinach dry. Spinach holds a lot of water. Any left behind dilutes the cream and makes the mixture watery, so pressing it fully dry keeps the final texture thick and creamy.
