Suet-crust for Beef-steak Pudding

Ingredients

Directions

  1. Chop the beef suet as finely as possible after removing the skin.

  2. In a bowl, combine the flour, chopped suet, and salt.

  3. Rub the suet into the flour with your hands.

  4. Gradually add cold water until a smooth paste forms.

  5. Transfer the paste to a floured board.

  6. Roll out the paste to a thickness of just over ⅛ inch.

  7. Butter a quart pudding basin well inside.

  8. Line the basin smoothly with the rolled-out paste.

  9. Trim the excess paste above the edge of the basin.

  10. Roll out the trimmed paste into a round for the top of the basin, also ⅛ inch thick.

  11. Slice the beef steak into thin pieces and flour them.

  12. Season the slices with pepper and salt.
