Why it works: Barley and parsley match in chemistry and in kitchens. They rank in the top 10% of all ingredient pairs, and cooks put them together in 630 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Mutton Broth

Ingredients

Directions

Prepare the broth

  1. Wash the mutton well until clean.

  2. Place the meat in a large saucepan with 3 pints of cold water and bring to a boil.

  3. Wash the pearl barley or rice in cold water.

  4. Once boiling, add the barley or rice and salt to help the scum rise.

  5. Reduce heat and let it simmer gently for 2.5 hours.

  6. Skim the broth occasionally with a spoon.

Make the parsley sauce

  1. If needed, prepare a sauce for the meat.

  2. Chop the parsley finely after washing and drying it.

  3. Melt the butter in a saucepan over heat.

  4. Stir in the flour smoothly once the butter is melted.

  5. Add 1 cup of broth to the butter and flour mixture, stirring until it boils and thickens.

  6. Mix in the chopped parsley and keep the sauce warm.

Serve and cool

  1. Once the mutton is cooked, remove it and place it on a hot dish.

  2. Pour the parsley sauce over the mutton.

  3. Pour the broth into a basin to cool and remove the fat once cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides the meat and rich flavour that the broth is built on.
Pearl barley or rice
Thickens the broth and adds body as it cooks.
Butter
Forms the fat base of the roux that thickens the parsley sauce.
Flour
Thickens the butter into a roux, giving the parsley sauce body.
Parsley
Adds fresh, herbal aroma to the sauce.

The step that matters

Adding the flour to the butter. If flour is stirred in without the butter fully melted, or added too fast, lumps can form. Cooking the butter and flour together first lets the starch swell smoothly when the broth is added, so the sauce thickens evenly.

Swap the parsley

How well each one fits the dish's main ingredients (mutton, barley, butter, flour):

  1. Capersfits better
  2. Nutmegfits about as well
  3. Turmericfits about as well
  4. Parsleythe original

Fit is the average pairing score against mutton, barley, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
