Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Entree, Shad Roe Croquettes

Ingredients

Directions

Poach the roe

  1. Wash the shad roes.

  2. Place the roes in a saucepan of boiling water with 1 teaspoon of salt. Cover the saucepan and simmer slowly for 15 minutes.

  3. Remove the saucepan from heat and let the roes cool.

  4. Remove the skin from the roes and mash the roes.

Make the binder

  1. Bring the cream to a boil in another saucepan.

  2. Rub the butter and flour together.

  3. Add the butter and flour mixture to the boiling cream and stir until thick.

  4. Remove the saucepan from heat.

  5. Mix in the egg yolks and all other ingredients. Let the mixture cool.

Shape and fry

  1. Form the mixture into croquettes.

  2. Dip each croquette in beaten egg, then in bread crumbs.

  3. Fry the croquettes in boiling oil or fat until golden brown.

  4. Serve the croquettes with Hollandaise sauce.

What each ingredient does

Shad roes
Provide the main flavour and the bulk of the croquette filling.
Cream
Adds moisture and richness to the mixture once thickened.
Egg yolks
Add richness and help bind the mixture once cooled.
Flour
Thickens the cream into a stiff base that holds the croquettes together.
Butter
Adds fat and flavour and combines with the flour to form the thickener.

The step that matters

Cooling the mixture before forming. The mixture must be cool and firm enough to hold its shape. If it is still warm and soft, the croquettes will slump and may break apart when dipped and fried.
