What each ingredient does

Veal
Main protein that becomes tender during slow, gentle cooking in the sauce.
Soft bread crumbs
Form the stuffing, adding bulk and moisture inside each rolled slice.
Melted butter
Adds richness and helps the outside of the veal brown in the pan.
Celery
Adds a savory aroma to the bread stuffing.

The step that matters

Cook slowly until tender. Veal contains connective tissue that breaks down with long, gentle simmering. Boiling or rushing the cooking leaves the meat tough and dry.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (veal, bread, butter, parsley, celery, pepper):

  1. Carrotfits better
  2. Leekfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against veal, bread, butter, parsley, celery, pepper. Candidates are from the same food group and used in at least 100 recipes.
