What each ingredient does

Oysters
Are the main ingredient, cooked briefly so the inside stays tender while the outside crisps.
Egg
Binds the crumbs to the oysters so the coating adheres during frying.
Cracker crumbs or bread crumbs
Form a crisp, golden coating that browns in the hot fat.

The step that matters

Frying in deep hot fat. If the fat is not hot enough, the coating absorbs oil and becomes greasy before it browns. Frying in hot fat seals the crumb coating quickly, so the oysters stay juicy inside and turn golden outside.

Swap the parsley

How well each one fits the dish's main ingredients (oyster, pepper, bread, egg):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Marjoramfits less well
  4. Capersfits less well

Fit is the average pairing score against oyster, pepper, bread, egg. Candidates are from the same food group and used in at least 100 recipes.
