Ingredients

Directions

Make the custard

  1. Beat the egg yolks slightly in a bowl.

  2. Add the sugar and salt, then stir continually over low heat until the mixture thickens and coats the back of a spoon.

  3. Remove from heat, chill, and add vanilla extract.

Fix and vary

  1. If the custard curdles, beat it with a hand mixer until smooth.

  2. For a variation, use 2 yolks and 1 tablespoon cornstarch when eggs are scarce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce as they set with gentle heat, giving it body and richness.
Milk
Forms the liquid base that the egg yolks thicken into a pourable sauce.
Sugar
Adds sweetness and balances the richness of the yolks and milk.

The step that matters

Stir continually over low heat. Egg proteins set gradually; if the heat is too high or stirring stops, the yolks can scramble and curdle the sauce.
