Why it works: Vanilla and coconut match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,294 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the dough

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the butter and sugar until light and fluffy.

  3. Beat in the egg and vanilla extract.

  4. In another bowl, mix the flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the wet mixture, mixing until combined.

Shape and bake

  1. Roll the dough into small balls and place them on a baking sheet.

  2. Flatten each ball slightly and decorate with optional toppings if desired.

  3. Bake for 10-12 minutes or until the edges are lightly golden.

  4. Allow to cool on a wire rack before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creaming with sugar traps air and gives the cookies tenderness and richness.
Sugar
Sweetens the cookies and helps create a light, fluffy texture when creamed with butter.
Egg
Binds the dough and adds structure and moisture to the cookies.
All-purpose flour
Provides the main structure that sets as the cookies bake.
Baking powder
Releases gas during baking so the cookies rise and stay soft.

The step that matters

Bake until only the edges are lightly golden. Sugar cookies keep baking on the hot sheet after leaving the oven. Pulling them when the edges are lightly golden keeps the centers soft, while waiting for deep browning can make them dry and hard.

Swap the coconut

The recipe marks coconut as optional. How well each one fits the dish's main ingredients (flour, sugar, butter, egg, vanilla):

  1. Raisinfits better
  2. Figfits about as well
  3. Blueberryfits about as well
  4. Coconutthe original

Fit is the average pairing score against flour, sugar, butter, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
