Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

  1. Pour a portion of the ferment into a separate bowl.

  2. Stir in Graham flour, sugar, and a little salt.

  3. Add flour gradually and let the sponge rise between additions.

  4. When the dough is too stiff to stir, work it by hand until elastic and clinging.

  5. Add all the required flour until the dough pulls away from the bowl sides.

  6. Let the dough rise in the bowl until light.

  7. Knead gently on a board to shape into loaves.

  8. Place in pans to rise, making a 1-inch deep gash along the length of each loaf.

  9. Cover and let rise in a warm room for 15 to 30 minutes.

  10. Bake in a moderate oven (350°F / 175°C) until done.
