Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the potatoes in salted water until tender.

  2. Soak the bread in cold water, then wring it dry in a clean towel; season with pepper, salt, and chopped parsley.

  3. Cut the fish into small slices and soak in cold salted water.

  4. Once the potatoes are done, peel and mash them, seasoning with salt and pepper.

Assemble and bake

  1. Layer the fish and bread alternately in a pudding dish, then top with the mashed potatoes.

  2. Bake the pie for one hour at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Forms the main body of the pie, providing the savoury filling.
Stale bread
Soaked and wrung dry, it absorbs moisture and adds body to the filling.
Potatoes
Mashed to form a soft topping that cooks through and browns in the oven.

The step that matters

Wring the bread dry. Bread soaked in water holds a lot of liquid. If it is not squeezed dry, the excess moisture thins the filling and can make the pie soggy when it bakes.

Swap the potato

How well each one fits the dish's main ingredients (bread, pepper, parsley):

  1. Carrotfits better
  2. Capsicumfits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against bread, pepper, parsley. Candidates are from the same food group and used in at least 100 recipes.
