Pound Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Line a cake pan with buttered parchment paper.

Make the batter

  1. In a bowl, cream together the butter, sugar, and one egg by hand.

  2. Add the remaining eggs one at a time, beating for two minutes after each addition.

  3. Flavor the mixture with vanilla essence.

  4. Sift in the flour, beat until smooth, pour into the cake pan, and bake for about 30 minutes at 350°F (175°C).

  5. Test the cake with a clean broom straw.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that sets the cake's crumb as it bakes.
Butter
Adds fat for tenderness and rich flavour in the crumb.
Sugar
Sweetens the cake and helps trap air when creamed with butter.
Eggs
Add structure, richness and moisture, and help bind the batter.

The step that matters

Beating in the eggs one at a time. Adding eggs gradually lets each one emulsify fully into the creamed butter and sugar. Adding them too quickly can cause the batter to curdle and trap less air, leading to a denser cake.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, sugar, butter, egg):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Lemonfits less well

Fit is the average pairing score against flour, sugar, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
