Chicken Salad

Why it works: Capers and lettuce match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 372 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Chicken Salad

Ingredients

Directions

  1. Remove fat, skin, and bone from the cold chicken, then cut it into half-inch dice.

  2. Trim and wash the lettuce or celery, break it into small pieces, and dry it on a clean towel.

  3. In a salad bowl, mix the chicken and salad, then dress with oil, vinegar, salt, and pepper.

  4. Prepare mayonnaise as directed in the Cardinal Sauce recipe, omitting the beet coloring, and cover the salad with it.

  5. Decorate the salad with olives, capers, and hard-boiled eggs cut into quarters.
