Ingredients
- 1 pint white beans
- 3½ lb salt pork
- 2 tablespoons molasses
- 1 teaspoon coarse sea salt
- ¼ teaspoon black pepper

Pick over the beans and place them in a pot with enough cold water to cover them and the pork.

Boil slowly for 2 hours or until tender, adding ⅓ cup of cold water every 15 minutes to soften the beans.

Drain the beans and transfer them to a deep bean pot.

Season with salt and pepper, then pour over the molasses and ¼ cup of the boiling water.

Lay the pork on top, cover tightly, and bake for 1 hour at 350°F (175°C).
