Baked Cod with Cream Sauce

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the cream sauce

  1. Make a cream sauce by melting the butter in a saucepan, then whisk in the flour until it bubbles.

  2. Gradually stir in the boiling milk, seasoning with salt, white pepper, and nutmeg.

Assemble and bake

  1. Remove the skin and bones from the cod, flake it with two forks, and place it in a baking dish.

  2. Season the cod with a little salt and pepper, pour the cream sauce over it, and sprinkle with bread crumbs.

  3. Dot with small bits of butter and bake in a 400°F (200°C) oven until browned, then serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cod
Forms the bulk of the dish, flaking into tender pieces beneath the sauce.
Butter
Enriches the sauce and helps the topping brown richly in the oven.
Milk
Forms the liquid base of the cream sauce, thickened by the starch in the flour.
Bread crumbs
Form a crisp, browned topping over the creamy sauce.

The step that matters

Thickening the cream sauce. Whisking flour into melted butter and then adding the boiling milk gradually lets the starch disperse and swell evenly. Adding liquid too fast, or unevenly, leaves lumps and a thin, uneven sauce.

Swap the white pepper

How well each one fits the dish's main ingredients (butter, bread, milk, nutmeg):
