Scotch Broth

Ingredients

Directions

  1. Soak the pearl barley in cold water overnight.

  2. Cut the lean mutton into ½ inch dice and the rest into small pieces. Make a stock with 2 ½ quarts of water and the barley, boiling and skimming for 2 hours.

  3. After 1.5 hours, fry the diced meat in butter until browned, then stir in the flour.

  4. Dice the turnip and carrot, chop the onion, and add them to the meat. Add the strained stock and barley, season with salt and pepper, and simmer for 1 hour.

  5. Stir in the chopped parsley before serving.
