Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Forms the body of the croquettes and provides the main flavor and texture.
Butter
Adds richness and fat that carries flavor and keeps the mixture tender.
Flour
Cooked with the butter and milk, it thickens the sauce so the mixture holds together.
Milk
Forms the thickened base that moistens the salmon and keeps the croquettes soft inside.
Eggs
Egg yolks set on heating, binding the mixture so it holds its shape.
Madeira
Adds sweetness and aromatic depth to the mixture.

The step that matters

Cooling the mixture before shaping. The mixture must be spread and cooled until firm so it can be shaped without sticking or collapsing. If shaped while warm and soft, the croquettes may slump and break apart during frying.
