Baked Chicken

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Split the chicken down the back.

  2. Rub both sides with butter and sprinkle generously with pepper, salt, and flour.

Bake

  1. Place in a covered baking pan and add a little water to create steam.

  2. Bake in a 350°F (175°C) oven for about 1 hour.

  3. If not golden brown, remove the lid for a few minutes, baste, and turn the chicken.

Serve

  1. Make a rich gravy and pour over the chicken before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young chicken
Provides the main protein, which cooks through during the long, moist oven bake.
Butter
Adds fat that carries seasoning and helps the skin brown in the oven.
Flour
Dusted on the skin, it helps the surface brown and forms a light crust.

The step that matters

Covered baking with steam, then uncovering to brown. The lid traps steam so the chicken cooks through gently, but the skin stays pale. Removing the lid near the end lets dry heat brown the surface, so checking colour matters.
