Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the meaty body of the dish and browns in butter for savoury flavour.
Flour
Coats the liver pieces so the sauce thickens and clings to them.
Hard-boiled eggs
Add richness and body to the sauce as they are chopped through it.
Mixed mustard
Adds sharp, tangy flavour that cuts through the richness of the liver and eggs.
Lemon juice
Adds acidity that brightens the sauce and balances the fat.

The step that matters

Dredging the liver in flour. Flour must coat the pieces evenly so the liquid thickens into a smooth sauce rather than lumps. Dry or clumped flour leaves streaks and uneven thickening once the water is added.

Swap the mustard

How well each one fits the dish's main ingredients (liver, butter, flour, lemon, pepper, egg):

  1. Shallotfits better
  2. Asparagusfits better
  3. Chivefits better
  4. Mustardthe original

Fit is the average pairing score against liver, butter, flour, lemon, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
