Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold sweetbreads
Form the main filling, providing the tender, rich meat texture inside the croquette.
Sauce veloute
Binds the minced sweetbreads and keeps the filling moist and cohesive.
Thin puff pastry
Forms a thin casing that becomes crisp and flaky when fried.
Beaten egg
Glues the grated bread to the pastry and promotes even browning.
Grated bread
Adds a crunchy outer crust that browns during frying.

The step that matters

Enclosing the filling in pastry. The pastry must be fully sealed around the filling, or hot fat can seep in and the filling can leak out. Fully cooled filling also holds its shape better when frying.

Swap the parsley

How well each one fits the dish's main ingredients (sauce, egg, bread):

  1. Capersfits better
  2. Nutmegfits about as well
  3. Parsleythe original
  4. Tarragonfits about as well

Fit is the average pairing score against sauce, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
