Filbert Rolls

Ingredients

Directions

  1. Place the peeled filberts in a pan over moderate heat.

  2. Stir constantly until they are evenly colored light yellow, then set aside to cool.

  3. Once cooled, pound the filberts with a little egg white.

  4. Mix the pounded filberts with flour, powdered sugar, and egg yolks.

  5. Shape the mixture as directed for almond rolls.

  6. Froth the mixture and trace a design on the surface with a knife.

  7. Ensure they are dried well while baking to achieve crispness.

  8. Optionally, sprinkle coarse powdered sugar over them before baking.
