What each ingredient does

Eggs
Thicken the milk as they set with heat, giving the drink a creamy body.
Milk
Forms the liquid base and, with the eggs, gives the punch its body.
Sugar
Adds sweetness to balance the lemon juice and rum.
Rum
Adds alcohol and its distinctive aroma and flavor to the finished drink.

The step that matters

Boil the mixture while stirring continuously. Egg proteins set as they heat, so the mixture can curdle or scramble if it overheats or is left unstirred. Constant stirring keeps the heat even and the texture smooth as it thickens.
