What each ingredient does

Onions
Browned onions give the gravy its deep, sweet flavour and body.
Butter
Carries the onions as they cook and adds richness to the gravy.
Flour
Thickens the broth into a smooth gravy as it cooks.
Broth
Forms the liquid base of the gravy and carries its savoury flavour.
Claret or port wine
Adds acidity and depth of flavour to the finished gravy.
Mushroom ketchup
Adds savoury, umami depth to the gravy.

The step that matters

Sautéing the onions until lightly browned. Browning the onions develops sweet, deep flavours through the Maillard reaction and caramelisation. Pale onions leave the gravy tasting flat, while over-browned ones turn bitter.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (butter, flour, pepper, port wine, mushroom, ketchup, lemon):
