Chocolate Sweetmeats

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the chocolate paste

  1. Break the chocolate into a little warm water.

  2. Heat it on the fire until completely dissolved.

  3. Mix the melted chocolate with the marzipan paste.

  4. Add vanilla or cinnamon if desired.

Shape and bake

  1. Spread the mixture on wafer paper in your preferred shape.

  2. Bake in a moderate oven at 350°F (175°C).

  3. If the sweetmeats are not dark enough, add a little ammonium carbonate.

What each ingredient does

Chocolate
Provides the main flavour and dark colour of the sweetmeats.
Marzipan paste
Forms the body of the mixture, giving it a soft, chewy, sweet texture.
Ammonium carbonate (in the method)
Helps darken and lighten the surface during baking, adding colour and a crisp texture.

The step that matters

Dissolving the chocolate completely. If the chocolate is not fully melted into the warm water, it stays lumpy and does not blend evenly with the marzipan, so the paste bakes unevenly and has gritty spots.
