What each ingredient does

White citrons
Provide the main fruit body that becomes tender and candied in the syrup.
Clarified sugar
Sweetens and preserves the fruit, and its concentrated syrup firms the citrons as they candy.
Coarse sea salt
Draws out bitterness and firms the citron flesh during the initial soak.

The step that matters

Boil the syrup until smooth. Sugar syrup must reach a sufficiently concentrated state to preserve the fruit; under-boiled syrup can leave the preserves watery and prone to spoiling.
