Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Provide the main savoury body and sweetness as they caramelise during frying.
Butter
Browns the onions and adds richness to the gravy.
Beer
Adds depth and a slightly bitter, malty flavour to the liquid.
Walnut pickle
Adds tangy, savoury depth characteristic of the dish.
Mushroom ketchup
Contributes concentrated umami savouriness to the gravy.
Essence of anchovy
Adds salty, savoury umami depth without being fishy when used in small amounts.

The step that matters

Frying the onions until brown. Browning the onions in butter develops caramelised, Maillard-driven flavour that the whole gravy depends on. Pale onions leave the gravy tasting flat and thin.

Swap the mace

How well each one fits the dish's main ingredients (onion, butter, beer, lemon, clove, walnut, mushroom):

  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against onion, butter, beer, lemon, clove, walnut, mushroom. Candidates are from the same food group and used in at least 100 recipes.
