Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Palates and Sweetbreads
Ingredients
Directions
Boil the palates until the black skin can be easily peeled off.
Parboil the sweetbreads; skin and cut the palates into pieces.
If the sweetbreads are large, cut them in half lengthwise.
Dust the palates and sweetbreads with flour.
Fry them in butter until light brown.
Stew them in the liquid they were boiled in, about 1½ cups.
Brown a piece of butter with flour, then add it to the stew with cayenne, salt, black pepper, grated lemon peel, nutmeg, and a glass of white wine.
Just before serving, stir in a spoonful of vinegar or the juice of a lemon.
