Sheep's Trotters Stuffed

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the sheep's trotters in good stock until the bones can be easily removed.

  2. Fill the space left by the bones with fowl or chicken farce.

  3. Dip the trotters in lard and coat them well with bread crumbs.

  4. Bake in a moderate oven at 350°F (175°C) until golden.

  5. Alternatively, fill the space with fried bread, boil the trotters, and serve with cream sauce.
