Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Turbot, Stuffed and Baked

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the stuffing

  1. Turn the skin of the underside of the turbot over without cutting it off.

  2. In a bowl, mix butter, parsley, scallions, morels, sweet herbs, yolks of eggs, pepper, and salt to make a stuffing.

  3. Spread the stuffing over the underside of the fish, cover it with the skin, and sew it up.

Coat and bake

  1. Melt some butter in a saucepan, then add the yolk of an egg, sweet herbs, salt, and pepper.

  2. Rub the fish all over with the mixture, then coat it with bread crumbs.

  3. Bake the fish in a preheated oven at 400°F (200°C) until cooked through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turbot
Forms the main body that holds the stuffing and cooks into flaky fish.
Butter
Adds richness and moisture to the stuffing and the coating.
Egg yolks
Bind the stuffing and the coating mixture together and add richness.
Morels
Add earthy aroma and a meaty, chewy texture to the stuffing.
Bread crumbs
Form a crust that browns in the oven and helps seal moisture in.

The step that matters

Sewing up the stuffed fish. If the skin is sewn too loosely or torn, the stuffing can leak out during baking, leaving the fish dry and unevenly cooked.

Swap the parsley

How well each one fits the dish's main ingredients (turbot, butter, egg, pepper, bread):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Capersfits less well
  4. Thymefits less well

Fit is the average pairing score against turbot, butter, egg, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
