Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heart sweetbreads
Main protein; boiling firms them so they hold their shape while roasting.
Egg
Beaten egg acts as a binder so the bread crumbs adhere to the sweetbreads.
Bread crumbs
Form a crisp, golden coating during roasting through browning.
Clarified butter
Fat that conducts heat for even browning and adds richness to the crust.

The step that matters

Cooling the boiled sweetbreads. Placing the sweetbreads in cold water after boiling stops the cooking so they stay tender rather than overcooked and firm. Thorough cooling also makes them easier to handle before skewering and coating.
