Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pineapple
Provides the main fruit flavour and the bulk of the filling.
Powdered white sugar
Sweetens the filling and draws juice out of the pineapple for stewing.
Cream
Adds moisture and richness, softening the texture of the filling.
Puff pastry
Forms the crisp, flaky shells that hold the filling.

The step that matters

Stewing the pineapple until soft. Sugar pulls juice from the fruit, and stewing softens its fibres so it mashes into a smooth marmalade rather than staying stringy or raw.
