Almond Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare the almonds

  1. Shell the sweet almonds and pour scalding water over them to remove the skins.

  2. Repeat with boiling water until all almonds are blanched.

  3. Place the blanched almonds in cold water, then dry them with a clean towel.

  4. Pound the almonds one at a time in a marble mortar, adding a few drops of rose-water to prevent oiling.

  5. Mix the sweet and bitter almonds as you pound.

Make the filling

  1. Cream the butter and sugar together, then gradually add the liquor.

  2. Beat the egg whites until stiff peaks form.

  3. Stir the almond mixture and egg whites alternately into the butter and sugar until well combined.

Bake and serve

  1. Prepare a puff pastry for a soup plate, butter the plate, and lay the pastry in it, trimming and notching the edges.

  2. Pour the almond mixture into the pastry and bake in a moderate oven (350°F / 175°C) for about 30 minutes.

  3. Grate loaf sugar over the pudding before serving.

What each ingredient does

Sweet almonds
Provide the main body and nutty flavour of the pudding once pounded into a paste.
Egg whites
Whipped to stiff peaks, they lighten the mixture and help it set as it bakes.
Butter
Creamed with sugar to add richness and a tender texture to the filling.
Powdered white sugar
Creams with the butter to add sweetness and help give the filling a smooth body.
Bitter almonds or peach kernels
Add a strong, aromatic almond flavour that balances the sweetness.

The step that matters

Beat the egg whites until stiff peaks form. Under-beaten whites stay runny and do not trap air, so the pudding will be dense; over-beaten whites turn grainy and dry and then separate. Fold them in gently so the air is kept.
