Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides fat and richness, so the frozen dish stays smooth and creamy.
Sweet almonds
Ground into a paste that adds body, nutty flavour and richness to the cream.
Bitter almonds
Adds a stronger almond aroma in a small amount, balancing the sweet almonds.

The step that matters

Stirring the almond paste into the freezing cream. Adding the paste gradually while the cream is partly frozen spreads it evenly and keeps ice crystals small, so the texture stays smooth rather than grainy or lumpy.

Swap the almond

How well each one fits the dish's main ingredients (cream, rose):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Walnutfits less well
  4. Filbertfits less well

Fit is the average pairing score against cream, rose. Candidates are from the same food group and used in at least 100 recipes.
