Macaroons

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Mix the ingredients well.

  2. Put flour in your palm and roll a lump of the mixture into a small ball.

  3. Place the balls on a buttered baking pan, spacing them two inches apart.

  4. Bake in a moderate oven at 350°F (175°C) for 8-10 minutes until pale brown.

  5. Ensure the top of the oven is hotter than the bottom for proper rising and cracking.
