Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Form the main body of the dish, cooked until tender and encased in the coating.
Egg yolks
Bind the bread crumbs to the oysters and help the coating set and brown when fried.
Grated bread
Forms the crumb coating that gives the fried exterior its crisp texture.
Lard
Conducts heat for frying and gives the coating its golden-brown color and rich flavor.

The step that matters

Fry until light brown. Frying in hot fat sets and browns the coating quickly. Overcooking dries out the oysters, which are small and cook fast, so the color is the cue to stop.

Swap the mace

How well each one fits the dish's main ingredients (oyster, egg, bread, nutmeg):

  1. Cinnamonfits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against oyster, egg, bread, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
