A-LA-mode Beef

Ingredients

Directions

  1. Prepare the beef three days in advance if serving cold. Remove the bone and secure the opening with skewers, tying the meat with kitchen twine.

  2. Rub the beef all over with salt. Chop the marrow and suet together, and pound the spices.

  3. Chop the pot herbs finely. Clean the sweet marjoram and sweet basil from the stalks, rubbing the leaves to a powder.

  4. Mix the powdered herbs, spices, pepper, and salt together.

  5. Cut the bacon or pork fat into pieces about ¼ inch thick and 2 inches long. Make deep incisions in the beef, close together.

  6. Stuff each incision with seasoning, then insert a piece of bacon, pressing down hard and covering with more seasoning.

  7. Pour a little Madeira wine into each hole.
