What each ingredient does

Shoulder of mutton
Forms the main body of the dish and becomes tender through slow stewing.
Grated bread
Soaks up juices and helps the stuffing hold together with a soft texture.
Minced suet
Adds fat that keeps the stuffing moist and rich during cooking.
Eggs
Egg yolks bind the stuffing so it holds its shape when sliced.
Butter
Browns the meat for color and flavor, and thickens the broth when rolled in flour.
Port wine
Adds sweetness and depth to the braising liquid.

The step that matters

Stew gently for two hours. Gentle, covered simmering breaks down the tough connective tissue in mutton slowly. Boiling hard would toughen the muscle fibers and dry out the stuffed meat.

Swap the onion

How well each one fits the dish's main ingredients (mutton, bread, parsley, pepper, nutmeg, egg, butter):

  1. Shallotfits better
  2. Carrotfits better
  3. Leekfits better
  4. Onionthe original
