What each ingredient does

Sugar
Provides sweetness and, once boiled, a thick syrup that preserves fruit.
Water
Dissolves the sugar so it can be heated evenly into a syrup.

The step that matters

Boil for 30 minutes or a little longer before adding fruit. Boiling concentrates the sugar, so the syrup reaches the high sugar level needed to preserve fruit. Stopping too early leaves a syrup that is too dilute and less stable.
