Veal Sweetbreads Roasted

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Trim the tough part from the sweetbreads.

  2. Blanch the sweetbreads in boiling water with a little coarse sea salt for 3 minutes.

  3. Transfer the sweetbreads to a basin of cold water until cool.

  4. Preheat your oven to 400°F (200°C).

Coat and roast

  1. Run a skewer through the sweetbreads and secure them on a spit.

  2. Beat the egg in a dish.

  3. Coat the sweetbreads with the beaten egg.

  4. Sprinkle bread crumbs over the sweetbreads.

  5. Drizzle clarified butter over the bread crumbs.

  6. Add more bread crumbs on top.

  7. Roast the sweetbreads for 15 minutes.

Serve

  1. Remove the sweetbreads from the skewer.

  2. Serve the sweetbreads on a dish with hot butter sauce mixed with a spoonful of gravy, a small bit of glaze, and a squeeze of lemon juice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; blanching firms them so they hold their shape during roasting.
Egg
Binds the bread crumb coating so it adheres to the sweetbreads.
Bread crumbs
Form a crisp, golden crust when roasted.
Clarified butter
Adds fat that helps the crumbs brown evenly and richly.
Butter sauce
Adds moisture and richness to the finished dish.
Lemon juice
Adds acidity that brightens the rich butter sauce.

The step that matters

Blanching the sweetbreads. Blanching in salted boiling water firms the tissue and helps remove impurities, so the sweetbreads hold together when skewered and roasted. Cooling them promptly in cold water stops further cooking and keeps the texture firm.
